This is the same mole recipe we use in our bone-in chicken mole at the newly revamped Casa Bonita. The recipe has been carefully overseen by our head chef Dana Rodriguez, a Chihuahua, Mexico native and James Beard nominee. Dana brings her unique perspective which is evident the second you open the jar and inhale the nutty, earthy smells and the guajillo, arbol and ancho peppers and spices.
